Idli, a South Indian staple, is now very popular in India as an appetizing meal. It is made with rice, urad daal and sometimes methi seed. Each ingredient is soaked separately, then combined into a batter that can be allowed to ferment overnight. This batter is then steamed to prepare soft and spongy idlis, it can be had alongside a variety of chutneys, sambar, and even dry powders (the most popular one is called “gun powder,” named aptly because it’s an extremely spicy mix with dried red chillies as the main ingredient!
